Recipe: Campfire Foil Packet Sausage and Potatoes

Ingredients (per person):

  • 1 pre-cooked sausage (like kielbasa or smoked sausage), sliced into rounds
  • 1 medium potato, thinly sliced
  • 1/4 onion, sliced
  • 1/2 cup bell peppers, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: 1/4 cup shredded cheese

Equipment:

  • Campfire or grill
  • Heavy-duty aluminum foil
  • Tongs
  • Knife and cutting board (for prep)

Instructions:

  1. If you haven’t pre-sliced your ingredients at home, start by slicing the sausage, potato, onion, and bell peppers.
  2. Tear off a piece of heavy-duty aluminum foil, about 12 inches long.
  3. In the center of the foil, layer half of the potato slices.
  4. Top with half of the sausage, onion, and bell peppers.
  5. Repeat the layers with the remaining ingredients.
  6. Drizzle olive oil over the top.
  7. Sprinkle with garlic powder, paprika, salt, and pepper.
  8. Fold the sides of the foil up and over the food, creating a sealed packet. Make sure it’s well-sealed to keep the steam in.
  9. Place the foil packet on hot coals in your campfire or on a grill over medium-high heat.
  10. Cook for about 20-25 minutes, flipping the packet over halfway through cooking time.
  11. Carefully open the packet (watch out for steam!) and check if the potatoes are tender. If not, reseal and cook for a few more minutes.
  12. If using cheese, sprinkle it on top and let it melt for a minute before serving.
  13. Eat directly from the foil packet for easy cleanup!
