Looking for a hearty, no-fuss dinner after a day of outdoor adventures? Try this Campfire Foil Packet Sausage and Potatoes! It’s easy to prepare, delicious, and requires minimal cleanup – perfect for camping!
Ingredients (per person):
- 1 pre-cooked sausage (like kielbasa or smoked sausage), sliced into rounds
- 1 medium potato, thinly sliced
- 1/4 onion, sliced
- 1/2 cup bell peppers, chopped
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional: 1/4 cup shredded cheese
Equipment:
- Campfire or grill
- Heavy-duty aluminum foil
- Tongs
- Knife and cutting board (for prep)
Instructions:
- If you haven’t pre-sliced your ingredients at home, start by slicing the sausage, potato, onion, and bell peppers.
- Tear off a piece of heavy-duty aluminum foil, about 12 inches long.
- In the center of the foil, layer half of the potato slices.
- Top with half of the sausage, onion, and bell peppers.
- Repeat the layers with the remaining ingredients.
- Drizzle olive oil over the top.
- Sprinkle with garlic powder, paprika, salt, and pepper.
- Fold the sides of the foil up and over the food, creating a sealed packet. Make sure it’s well-sealed to keep the steam in.
- Place the foil packet on hot coals in your campfire or on a grill over medium-high heat.
- Cook for about 20-25 minutes, flipping the packet over halfway through cooking time.
- Carefully open the packet (watch out for steam!) and check if the potatoes are tender. If not, reseal and cook for a few more minutes.
- If using cheese, sprinkle it on top and let it melt for a minute before serving.
- Eat directly from the foil packet for easy cleanup!
Tips:
- For easy prep, slice your ingredients at home and store them in sealed containers or zip-lock bags in your cooler.
- You can prepare the foil packets in advance and keep them in your cooler until ready to cook.
- Feel free to customize with your favorite vegetables or seasonings.
- If cooking for a group, consider writing names on the foil packets with a permanent marker to avoid mix-ups.
- Be careful when opening the hot foil packets – the steam can cause burns!
Enjoy your delicious and easy campfire meal!
